Ingredients:
- Noodles 300g
- Vegetable Oil 2 cups
- Capsicum 1
- Onion 1
- Broccoli (boiled) 4-6 florets
- Cauliflower (boiled) 5 florets
- Garlic (chopped) 6 cloves
- Ginger (chopped) 2 inch pc.
- Dried Red Chilli 1.
- Soy Sauce 2 tbsp.
- Chilli Sauce 2 tbsp.
- Tomato Sauce 1 tbsp.
- Cornstarch (mixed with water) 2 tbsp.
- Fresh Coriander (For Garnish)
- Salt & Pepper (to taste)
Method:
- Boil Noodles and set aside on plate & refrigerate for 30 mins.
- Fry Noodles till crispy and golden brown.
- Boil Broccoli & Cauliflower & keep aside.
- In Hot pan, add dried red chilli, chopped Garlic & Ginger and sauté for 2-3 mins. on medium flame.
- Add Onion and Capsicum & saute for 2-3 mins.Add Broccoli and Cauliflower
- Add Soy sauce, Tomato sauce, Szechuan sauce, Chilli Paste.
- Add 2 glasses of water and Add salt & pepper to taste.
- Simmer for 15 mins. & add cornstarch slurry.
- Boil and serve on top of Fried Noodles.
- Garnish with Fresh coriander.
