A healthier substitute to Fried Rice by substituting rice with cauliflower and keeping Asian flavours alive as same in original Fried Rice.
A really good option for fitness enthusiasts.
Onions (fine chopped)
Cauliflower (grated/fine chopped)
Carrot (fine chopped)
Ginger (fine chopped)
Garlic (fine chopped)
Capscisum (fine chopped)
Soy Sauce (Dark)
Schezwan Chutney / Sauce
Red Chilli Sauce
Salt & Pepper
Water (half cup)
Grate / chop your cauliflower and keep in a damp cloth , add salt and let it rest for 10 mins.
Hold and press the cloth to squeeze out extra water from the cauliflower.
Take a deep non stick wok/pan and heat oil in that. Once the oil is hot enough add ginger & garlic and saute well.
Then add onions and capsicum and cook for 4-5 mins. Keep Tossing regularly.
Once the onions are translucent add your beans and carrots. Toss well.
Then add your vinegar and toss again. Then add soy sauce and mix well.
Add salt to taste, and ground pepper.
Cook for 5 mins on medium flame and then add red chilli sauce, schezwan sauce. Then add your cauliflower.
Add half cup water in the pan and let it cook for 8-10 mins on medium flame with lid ON.
Once the water is evaporated completely, toss well and check the seasoning, cook for 2 mins on high flame and garnish with fresh cilantro.
