A delicious recipe and nutritious as well. Just in 15 mins you can make this dish, rich in fibre. Especially for fitness enthusiasts.
Quinoa 150 gms
Onion 1 (fine chopped)
Tomato 1 (chopped)
Capsicum 1 (chopped)
Salt to taste
Ground pepper to taste
Red Chili Flakes 1 tsp
Ghee/Olive Oil 1 tsp
Fresh Ginger 1/2 tsp (grated)
Fresh Coriander Handful
Lemon Wedge 1
Take a pan on medium flame and add quinoa to it.
Toast the quinoa until you hear the crackling sound , then add water, until the quinoa is totally submerged.
Add your veggies, salt, pepper, ginger, chilli flakes and add ghee/olive oil and mix well with spoon so that the quinoa doesn’t get stuck to pan.
Cover it with lid and cook for 10 mins over low flame.
After the opening the lid, increase flame to evaporate excess water. Keep Stirring in between.
Once the quinoa is puffed up , serve hot.
Garnish with Fresh Coriander and squeeze lemon to lift up the flavour.
